Cinnamon Sugar Soft Pretzels Recipe - One Little Project (2024)

Hello again! It’s Alicia from The Baker Upstairs, and I have anotherdelicious treat to share with you today. These cinnamon sugar soft pretzels are so soft and chewy, buttery and sweet, and amazingly delicious! They are one of my family’s favorite treats, and I’m excited to share the recipe with you!

When I was in high school, one of my first jobs was working in the china and crystal department at a big department store in the mall. I helped brides choose their registry items, watched people endlessly debate about one flatware set versus another, and sold crystal vases worth more than my car. 🙂 It was a pretty fun job most of the time, but there were times when it was incredibly slow.Sometimes a whole hour would pass without any customers coming into my area, and by the time I had worked there a couple of months, I had the entire tape of music that was played over the PA system memorized. One of the bright spots on a slow night was my break, when I would walk down to the mall food court and buy a soft pretzel and a soda.

Maybe it was just because I was a teenager working for the first time, and relishing the independence it provided, but I swear, nothing had ever tasted as good as those pretzels. They were fresh from the oven, buttery and hot, and so delicious! It was always a really tough choice to decide between a hot salted pretzel with cheese sauce, or a warm and sweet cinnamon sugar pretzel. I loved them both! These cinnamon sugar soft pretzels remind me of those lovely pretzels I enjoyed from the mall all those years ago, but they’re even better because they’re homemade! These days, I bake them with my children, and get to see the joy on their faces as they discover how delicious a hot pretzel can be.

You’ll start by dissolving the yeast in the milk, then adding sugar, butter, salt, and flour to make a soft pretzel dough. Be careful not to add too much flour, because you’ll want the dough to be soft and pliable. Place the dough in a greased bowl to rise, then go do something fun for an hour. 🙂

FAQs

What is the secret ingredient which makes a pretzel taste like a pretzel? ›

Lye. The dough is simple; take a basic yeast-risen dough that can be readied in an afternoon. But the trick to great pretzels is dipping the pretzels in a liquid wash before baking — and not just any wash, but a combination of water and lye. That's what gives pretzels their terrific color, texture and flavor.

What is the secret solution for Auntie Anne's pretzels? ›

While dough is rising, prepare a baking soda water bath with 2 cups warm water and 2 tbsp baking soda. Be certain to stir often. After dough has risen, pinch off bits of dough and roll into a long rope (about 1/2 inch or less thick) and shape. Dip pretzel in soda solution and place on greased baking sheet.

Why did you dip your pretzel dough into baking soda and water? ›

Like lye, baking soda is an alkaline substance, and when mixed with water and brushed over the pretzel dough, it changes the pH of the dough and gelates the surface starch. In the oven, the starch gel hardens and the alkaline baking soda makes browning happen fast.

What is the process for making a hard pretzel vs a soft pretzel? ›

Soft pretzels have a shorter baking time

Soft pretzels can usually be baked in 15 minutes; hard pretzels, meanwhile, must be baked for up to an hour. The longer baking time further dries out the pretzel. And, as we have discussed, the lack of moisture is what gives the hard pretzel its brittle texture.

What is the secret ingredient in pretzels? ›

Traditional Bavarian pretzels are dipped in a lye solution before they are baked. Lye, also known as sodium hydroxide, is essentially the same stuff that's used to make soap and clean drains. It can even dissolve glass.

What gives soft pretzels their flavor? ›

Baking soda is the key ingredient that gives soft pretzels their iconic flavor, when heated it reacts with the dough darkening the color and creating a chewy texture.

Does Auntie Anne's use lye or baking soda? ›

Well, the cheery ladies were very clear with me: they do NOT use lye. No sodium hydroxide/poison/caustic soda—none whatsoever—in their pretzels. (They do, however, dip their pretzels in a baking soda solution.)

What makes pretzels taste so good? ›

The answer lies in a brief dip in an alkaline water bath before baking. This bath essentially gelatinizes the outside of the pretzel, preventing it from fully “springing” during baking (as bread does) and giving pretzels their signature chewy crust. It also gives them their unique and indelible “pretzel” flavor.

What makes Auntie Anne's so good? ›

Auntie Anne Pretzels are somehow more delicious than your average pretzel. A healthy dose of sugar makes for a tasty dough, and a topping of melted butter and salt makes them positively addictive. Another reason the popular pretzels are so good is they are made and served fresh and warm.

Can you use baking soda instead of lye for pretzels? ›

If working with lye isn't an option for you, here are the directions for using baking soda instead. You simply dip the pretzels in boiling water that's been alkalized with baking soda. Note that the pretzels will be much lighter in color and won't have the same chewy texture.

What is the best flour for pretzels? ›

Bread flour provides more structure

Gluten helps provide structure, allowing a baked good to have more body and sturdiness. As a result, bread flour will make it easier for a pretzel to hold its shape. This can be an advantage to beginner bakers, especially since the shape of a pretzel is so important.

Do I have to boil my pretzels before baking? ›

Like bagels, pretzels are made in boiling water prior to baking to give them their snappy outsides and chewy insides (messy!). Soft pretzels must be boiled, or dipped in a baking soda bath (or lye if you're gusty and strict with your pretzel traditions). THEN, they can be baked.

What's the difference between a pretzel and a soft pretzel? ›

Texture: New York City pretzels tend to be softer and chewier than Pennsylvania pretzels. This is because they are typically made with a higher proportion of water in the dough, which results in a softer texture.

Why does pretzel dough taste different? ›

They're Boiled, Not Baked.

The dough is first shaped into a long rope and then boiled in water before being baked at a higher temperature than bread. This process creates a distinctive pretzel shape and gives them their unique taste.

What is the Flavouring on pretzels? ›

Salt is the most common seasoning, or topping, for pretzels, complementing the washing soda or lye treatment that gives pretzels their traditional skin and flavor acquired through the Maillard reaction. Other toppings are mustard, cheeses, sugar, chocolate, cinnamon, sweet glazing, seeds, and nuts.

What is the chemical dip on pretzels? ›

The dipping stage normally takes just 10-15 seconds of exposure to the hot alkaline solution which is about 200°F. Traditionally the solution was a mixture of sodium hydroxide and water. Today, most production involves the use of sodium carbonate and bicarbonate solutions which are not as caustic as NaOH.

What makes pretzels smell like pretzels? ›

After removing other scent molecules individually, the researchers found two molecules that are essential to the unique pretzel scent: 2-acetyl-1-pyrroline, which has a roasted smell, and 4-hydroxy-2,5-dimethyl-3(2H)-furanone, which has a caramel smell.

What is the lie for making pretzels? ›

Lye is primarily used to make pretzels, and it's the reason for their unmistakable shiny, mahogany color. To prepare, shaped pretzels are dipped in a lye bath, then baked in the oven. This method can also be used with rolls or buns. Once lye-dipped pretzels are baked, they're totally safe (and delicious!) to eat.
