Crusty Broiled Tomatoes – Southern Living Heirloom Recipe Cookbook

Ingredients

  • 4 medium tomatoes
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon ground red pepper
  • 6 tablespoons butter, melted
  • 1 cup soft fresh breadcrumbs
  • 1 cup freshly grated Parmesan cheese

Instructions

  • Preheat broiler with oven rack 5 1⁄2 inches from heat. Cut tomatoes in half. Spread cut sides with mustard; sprinkle with salt, black pepper, and red pepper.

  • Place tomato halves on oven rack. Combine butter, breadcrumbs, and cheese. Spoon crumb mixture on top of each tomato half.

  • Broil 2 minutes or until crumbs are golden brown and tomatoes are thoroughly heated.

Notes

To boost flavor, toss breadcrumbs with finely chopped fresh basil or your favorite fresh herb.

    My grandmother made stewed potatoes.And I make them to this day.Simple and are wonderful for any kind of meal.I also loved her fried apple pies & bread pudding with a sweet white sauce.I doctor up my white sauce with orange extract.

    Gosh, there are several precious recipes I have. The current one I adore is my dear MIL’s Yellow Squash Casserole. I was a cook before marrying my husband 23 years ago, but this was something unique, and it wowed me the very first time I tasted it.

    I called them hush puppies when I was little (oh yeah, we’re not from the South so they are not really hush puppies!) but they were a buttery potato dish that my mom made when I was little. I loved those potatoes!

      What would be a fabulous left over would be hollowed out tomatoes filled with left over macaroni and cheese topped with little bread crumbs with Parmesan cheese. Even a few cooked bacon crumbles Heavenly!!!

    Yumm-oh-la!!! Love that you did a tomato recipe, they are starting to come in here in western NC. Stacey I love your blog. Great recipes with easy to follow directions and ingredients. Our favorite heirloom recipe would be my grandmothers Corny Cornbread. The moistest inside with a crusty outside from an iron skillet….divine .

    My grandmother’s sour cream sugar cookies are my favorite. My grandmother would bake and decorate a batch of these cookies for each of her children’s families every year as part of their Christmas present.

    I come from a long line of good cooks, so I have a lot of favorites to choose from. My Baldwin County granddaddy’s gumbo comes to mind, as does my grandmother’s baked banana pudding with meringue. My other grandmother baked a mean strawberry cake that I still miss today, and my husband’s grandmother was known for her creamed corn and field peas, straight out of the garden.
