Flatbreads can be made into sandwiches, serve them with breakfast, dip them into spreads like hummus for a filling and nutritious snack. Make them into pizza.

Basically, anytime you want homemade bread but don’t have any yeast, these little flatbreads are a great answer. Heck, even if you do have yeast around, these delicious flatbreads are fun to make and super quick – no rising time, and no worry about dead yeast.

How are you guys holding up during all this weird time in our lives?

I know that yeast is hard to find in the stores right now, so I thought I’d share a super easy yeast-free dough that you can use to make bread or pizza dough.

Flour has been difficult to find too. If you’re out of all-purpose flour, you can mix your own with equal parts bread flour and cake flour.

But, you know, I have hope that the stores will get back to normal soon. I have hope that we will get through this, and that we will all care more about our fellow humans after this. We will all love one another. Much of our society’s bitterness will have washed away. That’s my hope anyway.

Flatbread makes a great pizza

Simply cook up the flatbreads according to the recipe, spread pizza sauce over them, top them with cheese, and whatever toppings you have and like.

We always make our own homemade pizza sauce. The ingredients are super simple. Just a small can of tomato paste, a little water to thin, and a bunch of spices. Super quick and easy, no cooking required, no blending or food processor required. And, it’s made from shelf-stable pantry items.

For the cheese, mozzarella would be my choice, but use what you’ve got in the fridge. We’ve used pepper jack, cheddar, Parmesan, Monterey Jack, or any blend of cheeses.

I always keep a package of pepperoni in the freezer for my husband. The pepperoni keeps really well in there.

Red peppers & onions are my favorite pizza toppings. Canned or fresh mushrooms. Canned black olives, jarred garlic, jarred roasted red peppers.

Recipe tips

Oil your hands before handling the dough. It’s a very sticky dough, so the oil on your hands helps the dough not stick to you.

If you don’t have a rolling pin to roll out the dough, simply use your hands to stretch it out. The kids can even help with this part. Make it fun. And don’t worry if the flatbreads don’t come out perfectly round, weird shapes are just as tasty!

Otherwise, this recipe is really easy and very straightforward. Mix the dry ingredients with the wet ones. Let the dough rest. Divide and roll out. Fry up. Eat!

Storage

These flatbreads are best fresh from the skillet. But they’ll store well in the fridge for a day or two. Longer than that, and you may want to freeze them.

Cool them completely on a wire rack. Then place them in a ziptop storage or freezer bag with pieces of parchment paper in between each flatbread.

Ingredients

  • 2 cups all purpose flour about 9.1 ounces or 260 grams
  • 1 tablespoon baking powder
  • 1 teaspoon Kosher salt
  • ¾ to 1 cup of lukewarm water ( approximately 100° – 110° F)
  • 1 tablespoon oil, melted butter, or shortening plus more for greasing the bowl and your hands

Instructions

  • Mix dry ingredients (flour, baking powder, and salt) together. Add ¾ cup water and 1 tablespoon oil, and mix until it has the consistency of sticky pizza dough. Add more water if necessary, and continue to mix until a sticky dough forms.

  • Knead the dough with oiled hands for a few minutes.

  • Let the dough rest, covered with plastic wrap, in greased bowl for 30- 60 minutes.

  • Divide the dough into 6 equal pieces. Roll each piece out on a lightly floured surface until it’s about the thickness of a tortilla. Stack the raw flatbreads with parchment paper in between each one.

  • Heat a dry griddle or dry skillet on the stove over medium-high heat.

  • Wipe off any extra flour that may be stuck to the outside of the flatbread. Cook flatbreads until golden brown spots develop, flip, cooking until done on both sides, about 2 minutes each side.

Notes

Flatbreads can be made ahead and kept under a towel or refrigerated or frozen for later use.
