This is exactly what happened with this arugula salad; it was love at first sight and I had to make it happen SOON, like my life depended on it #dramaqueen.
Seriously, this arugula salad with chunks of mozzarella and blood orange segments has my name written all over it. Sweet/savory combo, fresh, easy and light...check, check and check! And can we talk about how prettyit is?
The red from the blood orange and the pomegranate against the green from the arugula and the mint is just stunning. Pretty food is even more delicious, did you know that? That's the truth.

Blood Orange, Mozzarella and Arugula Salad

Ingredients
- 4large handfuls of arugulaalso called rocket salad
- 8oz fresh mozzarella bocconccini230 g, the one sold in liquid, sliced, then cut into cubes
- 3small blood orangesor two large, peeled and chopped - see notes
- ½½ pomegranateseeded
- 4fresh mint sprigsabout 2-3 leaves each, roughly chopped
- ½½ lemonjuiced
- 2tbspextra virgin olive oil
- 4tbspfreshly grated parmesan cheese
- freshly cracked pepper
- sea salt
Instructions
Arrange arugula on four plates. Top with mozzarella and oranges. Scatter pomegranate and mint.
Drizzle with lemon juice and olive oil. Grate some parmesan on top and season with salt and pepper to taste. Serve immediately.
Recipe Notes
To peel the skin and remove the pith of the oranges (the white membrane) at the same time, use a sharp knife and cut the top and the bottom of each orange. Then follow the curve of the orange and cut the peel + pith, going from top to bottom as close to the flesh as you can.

I'm not sure why but these flavors reminded me of Australia. Maybe because of the combo of mint and pomegranate in a salad? I don't know 🙂

The color combination of this salad is stunning and this would be the perfect way to start a Christmas dinner! Easy, yet elegant! Love everything about it!
